Baked Oat Muffins πŸ˜‹

Ingredients:
200g Rolled Oats
2 tsp Cinnamon
Pinch of Salt
1 tsp Baking Powder
2 tbsp Chia Seeds
1 tbsp Pumpkin Seeds
1 tbsp Mixed Seeds
2 tbsp of Suki (natural plant sweetener)
1 egg
3 tbsp Macadamia Nut Butter
1 ripe Banana
400ml of Fat Free Milk

Method:
1. Grease a cupcake tray with coconut oil and preheat your oven to 180 degree Celsius.
2. Combine all dry ingredients in a large bowl.
3. In a separate jug, mash the banana until smooth. Add eggs and macadamia nut butter and mix until combined.
4. Add milk, bit by bit, into the jug until completely incorporated.
5. Pour the wet ingredients into the dry ingredients and mix until just combined.
6. Transfer the batter into the cupcake tray and bake for 25 minutes, until risen and golden.

This is perfect for an alternative breakfast, if your boring oats aren’t doing it for you over the weekend, or an incredibly healthy snack. Packed with flavour and barely any sugar, it’s really a super food snack! πŸ‘Œ
